What is your current position at your brewery and how did you get started in the craft brewing industry?
I am president of Shannon Brewery in Keller, TX. My grandfather was a brewer in Ireland, so beer and brewing are in my blood. I’ve been brewing most of my adult life and can’t think of anything I’d rather be doing.
What’s new at Shannon Brewing?
We recently released Blackberry Crystal Wheat, a highly drinkable Kristallweizen. The base beer is infused with real blackberry fruit, giving it a wonderful blackberry flavor and beautiful purple color.
What’s the best part of being part of the craft brewing community?
Friendship. The brewing industry is competitive, but not like other businesses. We all want to win in the marketplace, but we also celebrate everyone’s accomplishments.
Name a favorite beer-food pairing.
Cheese. We recently had a rare beer and cheese pairing at the brewery. We’re going to do this again soon, right after our beer and smoked meat pairing!
What is your greatest achievement unrelated to your job?
I have an amazing 20 year old wife who supports me in this crazy business, and two beautiful daughters who make every day a joy.
What’s your favorite beer that your brewery doesn’t produce?
We hold a few homebrew contests every year. I am always amazed by the ingenuity and passion of these home brewers, plus the beer is often very good.
What is the most memorable travel destination where you had the opportunity to taste the local beer?
I have had the opportunity to travel around Ireland many times and have developed great relationships with the breweries there. My two favorite local beers are the Russian Imperial Stout from the White Gypsy Brewery and the Carraig Dhubh (porter) from the West Kerry Brewery.
What do you like to do during your time away from the brewery?
I’ve been a competitive football player (relative term) all my life. Playing football is a great outing and we usually get a pint afterwards.
